Confused about templates

So I've been doing a lot of coptic binding (for an example of what that looks like this is my website -> melodiebooks.com) and I was wondering how to format the templates to work with that type of stitching

Do you mean how does one get the pages to come out in the proper order in the signature ? One way is described here. I'm also working on other ways of doing that.
