Need something that looks like this

Hello peeps!
I found 2 planner pages I love here
Click on "Close Up View" to see the pages.
But, I'm not diabetic, I need this for tracking food for general health/diet so I don't want to purchase this whole package, and I'd like to be able to tweak the pages a bit to fit my own needs.
Can anyone suggest a way to "copy" these pages? I have no idea what program to use to even begin to make my own . . . let alone how to make it!
Anyone with template skills able to design two pages (preferably in Classic size) that are identical-ish?
I love this site and I love doing things myself, but I just don't know where to start on this project lol!

Tools
If you can "copy" the design yourself then there are a number of software tools you can use even if you are stuck with Microsoft Windows. Open source tools such as Scribus (a desk-top publishing package), The GIMP (a graphics/photo manipulation package), Inkscape (a vector drawing package) can all be downloaded from the 'net for free; that's free as in no money and no restrictive license either.
I'm using Scribus and Inkscape to create planner pages of my own (e.g. gym workout and Bible reading) albeit that I use them on a Mac and Linux workstations rather than WIndows machines but that's the beauty of open source cross-platform compatability.
2 Planner Pages needed
A while back I made my own versions of these planner pages. They are available from this website. I included the Open Office templates I started with so you can customize away. Please let us know if they help out.
